1 medium head of cauliflower, chopped into bite-sized florets

1 medium onion, finely diced

2 garlic cloves, minced

4 cups vegetable broth (homemade or store-bought)

1 cup heavy cream (or coconut cream for a vegan alternative)

2 tablespoons extra virgin olive oil

1 tablespoon fresh sage leaves, chopped (or 1 teaspoon dried sage)

Salt and freshly cracked black pepper, to taste

Zest of 1 lemon for brightness

Fresh parsley leaves, chopped, for garnish

Instructions
 

Sauté the Base: In a spacious pot, heat the extra virgin olive oil over medium heat. Add the finely diced onion and sauté, stirring occasionally, until it becomes translucent and soft, about 5 minutes. Then, stir in the minced garlic and continue cooking for an additional minute, until fragrant.

    Cook the Cauliflower: Add the chopped cauliflower florets to the pot and stir to combine, cooking for about 2 minutes. This step helps to develop the rich flavors in the base of the soup.

      Add Broth and Herbs: Pour in the vegetable broth and raise the heat to bring it to a rolling boil. Once boiling, reduce the heat to a gentle simmer and add the chopped fresh sage. Allow the mixture to simmer uncovered until the cauliflower is tender and easily pierced with a fork, about 15-20 minutes.

        Blend the Soup: Once the cauliflower is soft, remove the pot from heat. Using an immersion blender, blend the soup until it’s silky smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender, blending until smooth, then return it to the pot.

          Add Cream and Season: Return the blended soup to low heat and stir in the heavy cream (or coconut cream). Season the soup with salt, pepper, and lemon zest to taste. Gently warm the soup over the stove for a few more minutes, being careful not to let it come to a boil to maintain the creaminess.

            Serve: Ladle the velvety cauliflower soup into individual bowls. Garnish each bowl with a sprinkle of fresh chopped parsley, and a drizzle of olive oil for added richness if desired. Serve immediately and savor the comforting creaminess!
