Ingredients

12 oz cheese tortellini (fresh or frozen)

2 large red bell peppers

1 medium yellow onion, chopped

3 cloves garlic, minced

1 cup heavy cream

½ cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried Italian herbs (including basil and oregano)

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Roast the Peppers: Preheat your oven to 425°F (220°C). Cut the red bell peppers in half lengthwise and remove the seeds and stems. Arrange them cut-side down on a baking sheet that has been lined with parchment paper. Roast the peppers in the oven for 20-25 minutes, or until the skins are blistered and slightly charred. Once roasted, remove them from the oven and place them in a bowl. Cover the bowl tightly with plastic wrap and let the peppers steam for about 10 minutes. This steaming process will make it easier to peel off the skins.

Sauté the Onions and Garlic: While the peppers are steaming, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for approximately 5 minutes, or until the onion is soft and translucent. Next, stir in the minced garlic and cook for an additional 1-2 minutes until fragrant and golden.

Prepare the Creamy Sauce: Once the roasted peppers are cool enough to handle, peel off the skins and chop the peppers into small pieces. Add these chopped roasted peppers to the skillet with the sautéed onion and garlic. Pour in the heavy cream, then add the dried Italian herbs, salt, and pepper. Let the mixture simmer gently for about 5 minutes, allowing the flavors to meld beautifully.

Blend the Sauce: Carefully transfer the mixture to a blender or use an immersion blender to puree the sauce until smooth and creamy. Return the blended sauce to the skillet, keeping it over low heat. Stir in the grated Parmesan cheese and cook until it melts completely, resulting in a rich and creamy sauce.

Cook the Tortellini: In a separate pot, bring salted water to a boil. Add the tortellini and cook according to the package instructions until they are al dente. Once cooked, drain the tortellini and immediately add them to the creamy sauce. Toss gently but thoroughly to ensure the tortellini are well coated in the luxurious sauce.

Serve: Dish out the creamy roasted pepper tortellini onto plates. Garnish with fresh basil leaves and, if desired, sprinkle with additional grated Parmesan cheese for extra flavor. Enjoy!
