3 large red bell peppers

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Roast the Peppers: Preheat your oven to 450°F (230°C). Prepare the bell peppers by cutting them in half, removing the stems and seeds. Place the peppers cut-side down on a lined baking sheet. Roast in the preheated oven for 20-25 minutes, or until the skins are beautifully charred and the peppers are tender. Once roasted, remove them from the oven and allow them to cool for a few minutes. Once cool enough to handle, peel off the charred skins and chop the peppers into rough pieces.

    Sauté the Aromatics: In a medium skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for 5-7 minutes until it becomes translucent and soft. Stir in the minced garlic and continue to cook for another minute, allowing the mixture to become fragrant but not browned.

      Blend the Sauce: In a blender or food processor, combine the roasted peppers, sautéed onions and garlic, heavy cream, smoked paprika, and dried oregano. Blend on high speed until the mixture is perfectly smooth, creating a rich and creamy texture.

        Cook the Sauce: Transfer the blended mixture back into the skillet and reduce the heat to low. Stir frequently to prevent sticking. Gradually add in the grated Parmesan cheese, along with salt and pepper to your preference. Allow the sauce to simmer gently for about 5-7 minutes, or until it is heated through and has thickened slightly, enhancing the flavors.

          Serve and Garnish: Once cooked, remove the sauce from heat and let it cool for a couple of minutes.
