1 head of garlic

12 oz (340g) fettuccine pasta (or pasta of your choice)

2 tablespoons olive oil, divided

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup vegetable or chicken broth

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional, for a spicy kick)

2 cups fresh spinach

¼ cup fresh parsley, finely chopped (for garnish)

Zest from 1 lemon (optional, for an added burst of brightness)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the individual cloves. Drizzle with 1 tablespoon of olive oil, and wrap the garlic head tightly in aluminum foil. Roast for 30–35 minutes, or until the cloves are soft and caramelized. Once done, allow it to cool briefly, then squeeze the roasted garlic cloves into a small bowl and mash them with a fork until smooth.

    Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until al dente. Once cooked, reserve 1 cup of pasta water, then drain the pasta and set it aside.

      Prepare the Creamy Sauce: In a large skillet over medium heat, add the remaining 1 tablespoon of olive oil. When hot, add the mashed roasted garlic to the skillet and sauté for 1–2 minutes until fragrant. Pour in the broth and bring the mixture to a gentle simmer.
