2 tablespoons olive oil, divided

2 cups vegetable broth

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon onion powder

1 teaspoon garlic powder

Fresh parsley, chopped (for garnish)

½ cup cherry tomatoes, halved (optional for added freshness)

Drizzle 1 tablespoon of olive oil over the cut surface, wrap the garlic in aluminum foil, and place it in the oven. Roast for 30-35 minutes, or until the cloves are soft and caramelized. Once done, allow it to cool slightly, then squeeze the roasted garlic out of the skins into a bowl, discarding the skins.
