Creamy Mushroom and Chicken Risotto

1 cup Arborio rice

1 lb (450g) boneless, skinless chicken breast, diced into bite-sized pieces

2 cups fresh mushrooms (such as cremini or shiitake), sliced

1 medium onion, finely chopped

2-3 cloves garlic, minced

4 cups low-sodium chicken broth

1 cup dry white wine (such as Sauvignon Blanc), optional for flavor

1 cup freshly grated Parmesan cheese

1 cup heavy cream

1 tablespoon extra-virgin olive oil

1 tablespoon unsalted butter

Salt and freshly cracked black pepper, to taste

Fresh parsley, chopped, for garnish

Instructions
 

Prepare the Broth: In a medium saucepan, heat the chicken broth over low heat. This will keep it warm and ready for adding to the risotto throughout the cooking process.

    Cook the Chicken: In a large skillet or heavy pot, add the olive oil and butter over medium heat. Once the oil is hot and the butter has melted, add the diced chicken breast. Season with salt and pepper. Sauté for about 5-7 minutes or until the chicken is golden brown and fully cooked through. Remove the chicken from the skillet and set it aside on a plate.

      Sauté the Vegetables: In the same skillet, add the finely chopped onion and minced garlic. Sauté for 2-3 minutes, stirring frequently, until the onion becomes translucent and fragrant. Then add the sliced mushrooms and continue to cook for an additional 5-6 minutes, or until the mushrooms have softened and released their moisture.

        Toast the Rice: Add the Arborio rice to the skillet. Stir the rice gently with a wooden spoon, allowing it to toast in the mixture for about 1-2 minutes. This helps the grains become slightly translucent and enhances their flavor.

          Deglaze with Wine: Carefully pour in the dry white wine and increase the heat slightly. Stir constantly until the wine is almost fully absorbed by the rice, scraping up any flavorful bits from the bottom of the skillet.

            Add Broth Gradually: Begin to add the warm chicken broth to the risotto, one ladleful at a time. Stir frequently, and allow each addition to be mostly absorbed before adding the next. This process should take approximately 18-20 minutes. The risotto should become creamy and the rice should be tender yet have a slight bite (al dente).

              Bring It All Together: Once the rice reaches your desired creaminess and tenderness, stir in the cooked chicken, heavy cream, and freshly grated Parmesan cheese. Mix well until the cheese is melted and incorporated. Taste and adjust the seasoning with additional salt and pepper, if desired. If the risotto is too thick, add a little more broth or cream to achieve your preferred consistency.
