Creamy Lemon Spinach Pasta

8 oz (about 225g) spaghetti or fettuccine

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

Zest and juice of 1 large lemon

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

Fresh basil or parsley leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to the package directions until al dente, usually about 8-10 minutes. Before draining, reserve 1 cup of the pasta water. Drain the pasta and set it aside.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering but not smoking, add the minced garlic. Sauté for about 1 minute, stirring frequently, until the garlic is fragrant and lightly golden—be careful not to let it brown.

      Add Spinach: Incorporate the chopped spinach into the skillet. Cook, stirring occasionally, for approximately 3-4 minutes or until the spinach has wilted and is bright green.

        Create the Sauce: Lower the heat to a gentle simmer. Gradually pour in the heavy cream, stirring continuously to combine. Add the grated Parmesan, lemon juice, lemon zest, and red pepper flakes (if using). Continue to stir until the cheese has melted and the sauce has thickened to a creamy consistency.

          Combine Pasta and Sauce: Carefully add the drained pasta to the skillet. Gently toss to combine with the sauce, adding the reserved pasta water a little at a time, until the sauce reaches your desired creaminess.

            Season: Taste and adjust the flavor with salt and black pepper as needed.

              Serve: Plate the creamy pasta, and if desired, top with additional grated Parmesan, a few fresh basil or parsley leaves, and a light sprinkle of lemon zest to enhance flavor and presentation.
