Pasta:

12 oz (340g) spaghetti or fettuccine

Sauce:

1 cup heavy cream

1 cup vegetable or chicken broth

1/2 cup grated Parmesan cheese

1 large lemon (zested and juiced)

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper, to taste

Greens:

4 cups kale, stems removed and chopped

Crispy Crumbs:

1 cup panko breadcrumbs

2 tablespoons butter

1/2 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper, to taste

Garnish:

Fresh parsley, chopped (for serving)

Extra Parmesan cheese, for serving

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a rolling boil. Add your choice of spaghetti or fettuccine into the boiling water and cook according to the package instructions until al dente. Before draining, reserve 1 cup of the pasta cooking water, then drain the pasta and set aside.

      Prepare the Crispy Crumbs:

        In a medium skillet over medium heat, melt the butter until bubbly. Add the panko breadcrumbs, garlic powder, dried thyme, and a pinch of salt and pepper. Stir the mixture constantly for about 3-4 minutes, or until the breadcrumbs turn golden brown and crispy. Once done, remove from heat and set aside.

          Sauté the Kale:
