8 oz fettuccine or spaghetti

2 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (a blend of oregano, basil, and thyme)

Salt and freshly ground black pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for a touch of heat

Cook the Pasta: Fill a large pot with water, add a generous pinch of salt, and bring it to a rolling boil. Add the fettuccine or spaghetti, cooking according to the package instructions until just al dente (firm to the bite). Before draining, reserve about 1 cup of the starchy pasta water for later use. Drain the pasta and set it aside in a colander.

    Sauté Garlic: In a large skillet, heat the extra virgin olive oil over medium heat. Once hot, add the minced garlic and sauté for 1-2 minutes. Keep a close eye on it; you’re looking for it to become fragrant and lightly golden, but not burnt, as burnt garlic can turn bitter.

      Create the Sauce: Reduce the heat to low, then slowly pour in the heavy cream while stirring continuously to combine it with the garlic-infused oil. Allow the mixture to simmer gently for 2-3 minutes, stirring occasionally, until it thickens just slightly.

        Add Cheese and Spices: Gradually whisk in the freshly grated Parmesan cheese into the cream mixture, allowing it to melt completely and create a creamy sauce. Season this heavenly mixture with garlic powder, dried Italian herbs, and a sprinkle of salt and pepper. For a bit of heat, this is the time to add in the optional red pepper flakes to taste.
