12 oz fettuccine pasta

2 tablespoons olive oil

4 cloves garlic, minced

16 oz fresh mushrooms, sliced (preferably cremini or button)

1 teaspoon dried thyme

1 teaspoon dried oregano

1 cup vegetable or chicken broth

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta:

    - In a large pot, bring salted water to a rolling boil. Add the fettuccine and cook according to package directions until al dente (firm to the bite). Reserve 1 cup of the pasta cooking water, then drain the remaining water and set the pasta aside.

      Sauté the Garlic and Mushrooms:

          - Incorporate the sliced mushrooms into the skillet along with the dried thyme and oregano. Cook, stirring occasionally, for about 5 to 7 minutes or until the mushrooms are golden brown and have released their moisture.

            Create the Sauce:

              - Pour the vegetable or chicken broth into the skillet, using a wooden spoon to scrape any flavorful bits from the bottom. Allow the broth to simmer for about 2 to 3 minutes.
