Creamy Garlic Chickpea and Spinach Stew

2 cups canned chickpeas, drained and rinsed

4 cups fresh spinach, chopped

1 medium onion, diced

4 cloves garlic, minced

1 can (14 oz) coconut milk

1 cup vegetable broth

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon ground turmeric

Salt and freshly ground black pepper to taste

1 tablespoon fresh lemon juice

Fresh parsley, chopped (for garnish)

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion. Sauté for about 5 minutes, or until the onion becomes translucent and soft. Add the minced garlic and continue to cook for an additional 2 minutes, stirring frequently until the garlic is fragrant and lightly golden.

    Toast the Spices: Sprinkle in the ground cumin, smoked paprika, and ground turmeric. Stir well to combine, allowing the spices to toast and release their flavors for about another minute.
