2 tablespoons olive oil

1 lb (450 g) boneless, skinless chicken breasts, diced into bite-sized pieces

Salt and freshly ground black pepper, to taste

3 cloves garlic, minced

1 teaspoon Italian seasoning

4 cups fresh spinach (approximately 4 oz)

1 cup heavy cream

1 cup chicken broth (preferably low-sodium)

1 cup freshly grated Parmesan cheese

1/2 cup sun-dried tomatoes, sliced (optional for added flavor)

Fresh basil leaves, for garnish

Extra grated Parmesan cheese, for serving

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the pasta and cook according to the package instructions until it reaches an al dente texture. Once done, drain the pasta and set it aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken pieces, seasoning them generously with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Once fully cooked, remove the chicken from the skillet and place it on a plate; set aside.

      Sauté the Aromatics: In the same skillet, add the minced garlic along with the Italian seasoning. Sauté for about 1 minute, stirring constantly, until the garlic is golden and fragrant.

        Add the Spinach: Carefully stir in the fresh spinach, cooking it for approximately 2-3 minutes, or until the leaves have wilted down.
