12 oz penne or fusilli pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and freshly ground black pepper, to taste

3 cloves garlic, minced

1 teaspoon Italian seasoning (dried)

1 cup low-sodium chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese, plus extra for serving

5 oz fresh spinach (approximately 4 cups)

1 tablespoon fresh lemon juice

Fresh parsley, finely chopped (for garnish)

Instructions
 

Cook the Pasta: Fill a large pot with water and season it generously with salt. Bring it to a boil over high heat. Once boiling, add the penne or fusilli pasta and cook according to the package instructions until al dente. Drain the pasta in a colander and set it aside, returning it to the pot to keep warm.

    Sauté the Chicken: In a deep, large skillet, heat the olive oil over medium-high heat. Season the bite-sized chicken pieces with salt and freshly cracked black pepper. Once the oil is hot, add the chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and place it on a plate; set aside.

      Add Garlic and Seasonings: In the same skillet where you cooked the chicken, reduce the heat to medium. Add the minced garlic and Italian seasoning to the residual oil. Sauté for about 30 seconds, stirring frequently, until the garlic is fragrant but not browned.
