Creamy Chicken and Spinach Pasta Bake

300g penne pasta

2 tablespoons olive oil

2 chicken breasts, diced into bite-sized pieces

3 cloves garlic, minced

1 medium onion, finely chopped

200g fresh spinach, washed and chopped (or 200g frozen spinach, thawed and drained)

400ml heavy cream

200g cream cheese, softened

150g grated mozzarella cheese

100g grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Set your oven to preheat at 180°C (350°F) to prepare for baking.

    Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to the package instructions until al dente. Once done, drain the pasta and set it aside.

      Sauté Chicken and Vegetables: In a sizeable skillet, heat the olive oil over medium heat. Add the diced chicken and sprinkle with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and thoroughly cooked.

        Add Aromatics: Toss in the chopped onion and minced garlic to the skillet. Sauté for another 3-4 minutes until the onion becomes translucent. Next, stir in the chopped spinach, cooking it until wilted, which should take about 2-3 minutes.

          Make the Creamy Sauce: Reduce the heat to low. Pour in the heavy cream, then add the softened cream cheese and Italian seasoning. Stir continuously until the cream cheese melts and the sauce becomes creamy and smooth.
