2 cups boneless, skinless chicken breasts, diced into bite-sized pieces

2 cups fresh broccoli florets

1 cup quinoa (or brown rice), rinsed

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup chicken broth (low-sodium recommended)

1 cup heavy cream

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese, divided

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Sauté the Chicken: In a large skillet over medium heat, warm the olive oil. Once sizzling, add the diced chicken breasts, seasoning them with salt, ground black pepper, dried basil, and dried oregano. Sauté the chicken until browned and cooked through, approximately 5-7 minutes. Once cooked, transfer the chicken to a plate and set aside.

    Cook the Aromatics: In the same skillet, add the chopped onion and minced garlic. Sauté for about 3-4 minutes, stirring occasionally, until the onion is soft and translucent, releasing its delightful aroma.

      Add Broccoli and Quinoa: Introduce the broccoli florets into the skillet, stirring for an additional minute to combine. Next, add the rinsed quinoa (or brown rice) along with the chicken broth. Increase the heat slightly to bring the mixture to a gentle simmer.
