1 medium head of cauliflower, cut into bite-sized florets

8 oz elbow macaroni (or pasta of your choice)

1 cup sharp cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened at room temperature

2 cups whole or 2% milk

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon mustard powder

1/2 teaspoon smoked paprika

Salt and freshly cracked black pepper to taste

1/4 cup grated Parmesan cheese

2 tablespoons unsalted butter

1/2 cup breadcrumbs (optional, for topping)

Prepare the Cauliflower: In a large pot, bring generously salted water to a rolling boil. Add the cauliflower florets and cook for about 5-7 minutes, or until they are tender yet still firm enough to hold their shape. Drain the cauliflower and set aside.

    Cook the Pasta: In the same pot, add fresh water (and a pinch of salt, if desired) and cook the elbow macaroni according to the package instructions, typically about 7-9 minutes, until al dente. Drain the pasta and drizzle with a small amount of olive oil to prevent sticking, then set aside.

      Make the Cheese Sauce: In a large saucepan over medium heat, melt 2 tablespoons of unsalted butter. Once melted, add 2 tablespoons of all-purpose flour and whisk continuously for 1-2 minutes until the mixture forms a light roux (it should bubble slightly without browning).

        Combine Ingredients: Gradually add 2 cups of milk to the roux, whisking constantly to prevent lumps from forming. Once smooth, stir in the garlic powder, onion powder, mustard powder, smoked paprika, and a generous pinch of salt and freshly cracked pepper. Continue whisking for approximately 5-7 minutes until the sauce thickens and coats the back of a spoon.
