12 oz fettuccine or penne pasta

1 lb smoked sausage (Andouille or Chorizo), sliced into rounds

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup shredded sharp cheddar cheese

1 tbsp Cajun seasoning

1 tsp smoked paprika

Salt and pepper, to taste

2 tbsp olive oil

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or penne pasta, cooking according to the package instructions until al dente, typically about 8-10 minutes. Once cooked, drain the pasta and set it aside.

    Sauté the Sausage: Heat the olive oil in a spacious skillet over medium heat. Once the oil shimmers, add the sliced sausage. Cook for approximately 5-7 minutes, or until the sausage is nicely browned on both sides. Remove the sausage from the skillet and set aside, preserving the flavorful drippings in the pan.
