Ingredients

12 oz fettuccine pasta

1 lb boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until al dente. Drain well, reserving a cup of the pasta water, and set aside.

Prepare the Chicken: While the pasta cooks, season both sides of the chicken breasts liberally with Cajun seasoning, along with a pinch of salt and freshly cracked pepper for added flavor.

Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once hot, carefully add the seasoned chicken breasts. Cook for about 5-7 minutes on each side, or until they are beautifully golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and allow it to rest on a cutting board for a few minutes before slicing it into strips.

Sauté the Vegetables: In the same skillet, add the diced onion, minced garlic, and sliced red and green bell peppers. Sauté over medium heat until the vegetables are soft and slightly caramelized, about 4-5 minutes. Stir occasionally to prevent burning.

Make the Sauce: Lower the heat to medium, then pour in the heavy cream and chicken broth. Gradually stir in the grated Parmesan cheese until the sauce is creamy and smooth. Allow the mixture to simmer for about 3-4 minutes, letting it thicken slightly. If the sauce becomes too thick, add a bit of the reserved pasta water until the desired consistency is reached.

Combine Everything: Add the cooked fettuccine and sliced chicken back into the skillet with the sauce. Gently toss everything together, ensuring that the pasta and chicken are well-coated in the creamy Cajun sauce. Taste and adjust seasoning with more salt and pepper if necessary.

Garnish and Serve: Serve the pasta hot, generously garnished with freshly chopped parsley for a pop of color and a hint of freshness. Enjoy this decadent and flavorful Spicy Creamy Cajun Chicken Pasta!
