1 sheet of puff pastry (thawed if frozen)

6 slices of thick-cut bacon, diced

1 small onion, finely chopped

2 cloves garlic, minced

4 oz blue cheese, crumbled

1 cup heavy cream

2 large eggs

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper, to taste

1 egg (for egg wash)

Chopped chives, for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C) so that it reaches the right temperature by the time you are ready to bake.

    Cook the Bacon: In a medium skillet set over medium heat, add the diced bacon. Cook until it is crispy and golden, stirring occasionally. Once cooked, transfer the crispy bacon to a paper towel-lined plate using a slotted spoon. Leave the rendered bacon fat in the skillet for the next step.

      Sauté the Aromatics: With the bacon fat still in the skillet, add the finely chopped onion. Sauté for about 5 minutes or until the onion is soft and translucent. Then, add the minced garlic and continue cooking for an extra 1-2 minutes until fragrant. Once done, remove the skillet from heat and allow the mixture to cool slightly.

        Prepare the Tartlet Shells: On a floured surface, roll out the puff pastry to approximately 1/4 inch thickness. Using a round cutter about 4 inches in diameter, cut out circles of pastry. Gently press each circle into the cups of a muffin tin to form small tartlet shells.

          Mix the Filling: In a medium bowl, whisk together the heavy cream, eggs, thyme, and seasoning with salt and pepper. Fold in the sautéed onion and garlic mixture, the cooked bacon, and the crumbled blue cheese until everything is well incorporated.

            Fill the Tartlets: Carefully pour the filling mixture into each puff pastry shell, filling them up to about 3/4 to allow for rising during baking.

              Egg Wash: In a small bowl, beat the additional egg. Brush this egg wash over the edges of the pastry shells, which will create a beautiful golden finish as they bake.

                Bake: Place the muffin tin in your preheated oven and bake for 18-20 minutes, or until the pastry is puffed and golden and the filling has set.

                  Cool and Serve: Remove the tartlets from the oven and allow them to cool for a few minutes in the tin. Carefully release each tartlet from the muffin tin. If desired, garnish with freshly chopped chives for a touch of color and flavor before serving warm.
