Ingredients

Noodles:

8 oz rice noodles (or substitute with your preferred noodles)

Peanut Sauce:

1/2 cup creamy peanut butter

3 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 tablespoons honey or maple syrup (for a vegan option)

2-3 cloves garlic, minced

1-2 teaspoons sriracha (adjust based on your spice preference)

2-3 tablespoons warm water (to thin the sauce as needed)

Vegetables:

1 red bell pepper, thinly sliced

1 small cucumber, julienned

2 carrots, grated or julienned

1 cup bean sprouts

3 green onions, sliced

1 cup fresh cilantro, chopped

Garnishes:

Chopped peanuts

Lime wedges

Extra cilantro for topping

Sesame seeds (optional)

Instructions

Cook the Noodles: Fill a large pot with salted water and bring it to a rolling boil. Add the rice noodles to the pot and cook according to the package instructions, usually about 4-6 minutes. Once the noodles are tender, drain them and rinse under cold water to halt the cooking process. Set the noodles aside.

Prepare the Peanut Sauce: In a medium bowl, combine the creamy peanut butter, soy sauce, rice vinegar, sesame oil, honey (or maple syrup), minced garlic, and sriracha. Whisk the mixture until it’s smooth and well-blended. If the sauce feels too thick, add warm water gradually, one tablespoon at a time, until you achieve your desired consistency.

Assemble the Dish: In a large mixing bowl, toss together the cooked noodles and the peanut sauce. Ensure that every strand of noodle is evenly coated in the sauce for maximum flavor.

Add the Vegetables: Gently fold in the sliced red bell pepper, julienned cucumber, grated carrots, bean sprouts, sliced green onions, and chopped cilantro. Mix thoroughly to ensure the vegetables are well distributed among the noodles.

Serve Cold: Divide the noodle mixture into individual serving bowls. Top each bowl with chopped peanuts, lime wedges, and a sprinkle of additional cilantro. If desired, add a sprinkle of sesame seeds for an extra touch of flavor and crunch.

Chill & Enjoy: For a refreshing twist, refrigerate the assembled noodles for 20-30 minutes before serving. This allows the flavors to meld beautifully. Serve the dish chilled and delight in your delicious Spicy Thai Peanut Noodles!
