2 cups cooked chicken breast, shredded

1 cup black beans, thoroughly rinsed and drained

1 cup sweet corn, drained (use canned or cooked frozen)

1 red bell pepper, finely diced

1 ripe avocado, diced

1/4 cup red onion, finely chopped

1/3 cup fresh cilantro, coarsely chopped

Juice of 2 limes (about 1/4 cup)

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

4 large whole wheat or flour tortillas

1 cup Greek yogurt or sour cream (to use as a creamy dressing)

Optional: ½ cup shredded cheese (Cheddar or Monterey Jack)

Instructions
 

In a large mixing bowl, combine the shredded chicken, black beans, sweet corn, diced red bell pepper, avocado, red onion, and chopped cilantro. Gently stir to mix the vegetables and chicken evenly.

    In a separate small bowl, whisk together the lime juice, ground cumin, chili powder, salt, and pepper until well combined. This will serve as your zesty dressing.

      Pour the lime dressing over the chicken mixture, tossing gently to coat all the ingredients thoroughly. Make sure each component is well-seasoned.

        If you choose to use shredded cheese, fold it into the chicken salad mixture, ensuring it’s evenly distributed.

          Take a tortilla and lay it flat on a clean surface. Scoop a generous amount of the chicken salad mixture into the center, leaving about 1-2 inches of space around the edges for folding.
