Ingredients

8 oz. (225g) thin rice noodles or spaghetti

1/4 cup creamy peanut butter

3 tablespoons low-sodium soy sauce

2 tablespoons sesame oil

1 tablespoon honey or maple syrup (for a vegan option)

1 tablespoon rice vinegar

1 teaspoon sriracha or chili paste (adjust for personal heat preference)

1 garlic clove, minced

1-inch piece of fresh ginger, grated

1/2 cup shredded carrots

1/2 cucumber, julienned

1 red bell pepper, thinly sliced

3 green onions, sliced (white and green parts separated)

1 tablespoon sesame seeds

Fresh cilantro or mint leaves, for garnish (optional)

Instructions

Cook the Noodles: In a large pot, bring salted water to a rolling boil. Add the rice noodles or spaghetti and cook according to the package instructions until tender but still firm to the bite (al dente). Once cooked, drain the noodles and rinse them under cold running water to halt the cooking process and cool them down. Set the cooled noodles aside in a mixing bowl.

Prepare the Peanut Sauce: In a medium-sized mixing bowl, combine the creamy peanut butter, low-sodium soy sauce, sesame oil, honey (or maple syrup), rice vinegar, sriracha, minced garlic, and grated ginger. Whisk the ingredients together until smooth and well-blended. Taste the sauce and adjust the seasoning if needed. If the sauce is too thick, gradually incorporate a tablespoon of warm water until you achieve your desired consistency.

Mix the Ingredients: In the bowl containing the cooled noodles, add the shredded carrots, julienned cucumber, sliced red bell pepper, and the white parts of the green onions. Drizzle the prepared peanut sauce over the top and use tongs or two forks to toss everything gently until the noodles and vegetables are thoroughly coated with the sauce.

Chill for Flavor: To enhance the flavor profile, cover the mixing bowl with plastic wrap or transfer the noodles to an airtight container. Refrigerate for at least 30 minutes. This chilling time allows the flavors to meld beautifully, making the dish even more refreshing.

Serve and Enjoy: After chilling, give the noodle mixture another gentle toss to combine any settled sauce. Serve the cold peanut sesame noodles on plates or in bowls, garnishing with the remaining green onion slices, a sprinkle of sesame seeds, and fresh cilantro or mint leaves if desired. Dive in and enjoy the delightful flavors of this chilled dish!
