2 cups all-purpose flour

1 teaspoon active dry yeast

3/4 teaspoon salt

1 tablespoon extra virgin olive oil

3/4 cup warm water (approximately 110°F or 43°C)

1/2 cup pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella cheese, diced or shredded

1/4 cup freshly grated Parmesan cheese

Fresh basil leaves for garnish

Balsamic glaze for drizzling (optional)

Instructions
 

Prepare the Dough:

    - In a mixing bowl, combine the warm water with the active dry yeast. Stir gently and let it sit for 5-10 minutes or until it becomes frothy.

      - In a separate larger bowl, whisk together the all-purpose flour and salt. Gradually pour in the yeast mixture along with the olive oil, stirring until a sticky dough begins to form.

        - Transfer the dough to a floured work surface and knead for approximately 5 minutes until the dough is smooth and elastic.

          First Rise:

            - Lightly coat a large bowl with olive oil and place the kneaded dough inside, turning it to coat all sides. Cover the bowl with a damp cloth or plastic wrap.

              - Set it in a warm, draft-free place to rise for about 1 hour, or until it has doubled in size.

                Preheat Oven:

                  - Preheat your oven to 475°F (245°C). For best results, place a pizza stone or an inverted baking sheet inside the oven to heat up.

                    Shape the Flatbread:

                      - Once the dough has risen, gently punch it down to release any trapped air. On a floured surface, either roll out or stretch the dough into a rectangle or circle about 1/2 inch thick.
