Ingredients

1 bone-in turkey breast (4-5 pounds)

1/2 cup unsalted butter, softened

3 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

1 tablespoon fresh sage, finely chopped

1 tablespoon lemon zest

1 tablespoon Dijon mustard

Salt and freshly ground black pepper, to taste

1 cup low-sodium chicken broth

1 cup white wine (optional)

1 onion, quartered

2 carrots, cut into large chunks

2 celery stalks, cut into large chunks

Instructions

Preheat the Oven: Begin by preheating your oven to 325°F (165°C). Ensure that a rack is positioned in the center of the oven for even cooking.

Prepare the Herb Butter: In a mixing bowl, blend together the softened butter, minced garlic, chopped rosemary, chopped thyme, chopped sage, lemon zest, Dijon mustard, and a generous sprinkle of salt and freshly ground black pepper. Stir until all ingredients are thoroughly combined, creating a fragrant herb-infused butter.

Prepare the Turkey Breast: Using paper towels, pat the turkey breast dry to remove any excess moisture. Gently insert your fingers under the skin of the turkey breast to loosen it without breaking, creating a pocket for the herb mixture.

Apply the Herb Butter: Take half of the prepared herb butter and carefully spread it under the skin of the turkey breast, ensuring to cover as much surface area as possible for maximum flavor. Use the remaining butter to rub all over the outside skin of the turkey to achieve a beautiful, crispy finish.

Prepare the Roasting Pan: In a large roasting pan, arrange the quartered onion, carrot chunks, and celery pieces. This vegetable bed will add delicious flavor and help elevate the turkey breast during roasting.

Add Liquid: Carefully pour the chicken broth and optional white wine into the bottom of the roasting pan, creating a moist environment for the turkey as it cooks.

Roast the Turkey Breast: Place the turkey breast skin-side up atop the vegetables in the roasting pan. Roast in your preheated oven for approximately 2 to 2.5 hours, or until the internal temperature registers at 165°F (74°C) using a meat thermometer.

Baste: About halfway through the roasting process, baste the turkey with the pan juices to promote an even, golden skin. If you notice the skin darkening too quickly, loosely cover it with aluminum foil to prevent burning.

Rest the Turkey: After achieving the desired internal temperature, remove the turkey from the oven. Let it rest for 15-20 minutes before carving; this resting period allows the juices to redistribute for the juiciest slices.

Carve and Serve: Carve the turkey breast into slices and arrange it on a serving platter. Enhance the presentation by including the roasted vegetables and drizzling the delicious pan juices over the turkey.
