Ingredients

1 cup canned pumpkin puree

1/2 cup unsalted butter, softened to room temperature

1/2 cup packed brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup semi-sweet chocolate chips

1/2 cup chopped walnuts (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper to prevent the cookies from sticking.

Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using a whisk or electric mixer until the mixture is light, airy, and fluffy. Incorporate the pumpkin puree, egg, and vanilla extract, mixing until everything is smooth and well combined.

Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking soda, ground cinnamon, ground ginger, ground nutmeg, and salt. Whisk them together until they are evenly distributed and free of lumps.

Combine Mixtures: Gradually incorporate the dry ingredient mixture into the wet ingredients, using a spatula or wooden spoon. Stir gently until the mixture is just combined—be careful not to overmix to ensure a tender cookie texture.

Add Chocolate Chips & Nuts: Carefully fold in the semi-sweet chocolate chips and, if desired, the chopped walnuts, ensuring they’re evenly distributed throughout the cookie dough without overworking it.

Scoop the Cookies: Using a cookie scoop or a tablespoon, drop rounded balls of cookie dough onto the prepared baking sheet. Space them about 2 inches apart to allow for spreading during baking.

Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes. Keep an eye on them; the edges should be lightly golden while the centers may still look slightly soft. They will firm up as they cool.

Cool Down: Remove the baking sheet from the oven and allow the cookies to cool for about 5 minutes on the sheet. After this, transfer them to a wire rack to cool completely.

Enjoy: Once fully cooled, indulge in your delicious chocolate chip pumpkin cookies alongside a glass of milk or your favorite warm beverage!
