Chili Chicken Pasta Bowls for Lunch

8 oz penne pasta

1 lb boneless, skinless chicken breast, diced

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 can (15 oz) diced tomatoes with green chilies

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

1 cup chicken broth

1 cup corn (frozen or fresh)

1 cup black beans, rinsed and drained

Fresh cilantro or parsley, for garnish

Shredded cheese (optional, for serving)

Lime wedges (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta and set it aside.

    Sauté the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced chicken breast and season with salt, pepper, and half of the chili powder. Sauté until the chicken is browned and cooked through, about 5-7 minutes. Once done, transfer the chicken to a plate and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Toss in the diced onion and sauté for 2-3 minutes, or until it becomes soft and translucent. Then, add the minced garlic and both bell peppers. Continue to cook for an additional 3-4 minutes, stirring occasionally, until the bell peppers start to soften.

        Combine Ingredients: Carefully add the diced tomatoes (including their juice), chicken broth, remaining chili powder, cumin, paprika, oregano, corn, and black beans. Stir everything together until thoroughly combined. Allow the mixture to simmer for 5 minutes to meld the flavors. Once simmering, return the cooked chicken to the skillet and mix well.

          Mix in Pasta: Add the drained penne pasta to the skillet. Gently toss everything together, ensuring the pasta is well-coated with the spicy sauce. Taste and adjust seasoning with additional salt and pepper if needed.

            Serve: Spoon the spicy chili chicken pasta into bowls. Garnish with fresh cilantro or parsley. If desired, add shredded cheese and serve with lime wedges on the side for a zesty touch.
