Ingredients

2 medium zucchinis, spiralized into noodles

2 boneless, skinless chicken breasts (approximately 1 lb), cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prep the Zucchini: Begin by spiralizing the zucchinis using a spiralizer to create even noodles. Once complete, set the zoodles aside.

Cook the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken pieces, season with salt, black pepper, and Italian seasoning. Sauté for about 5-7 minutes, or until the chicken is golden brown and fully cooked through. Once done, remove the chicken from the skillet and place it on a plate to keep warm.

Make the Alfredo Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute, stirring frequently until it becomes fragrant. Pour in the heavy cream, continuously stirring to incorporate. Allow the mixture to come to a gentle simmer and cook for about 2-3 minutes until it thickens slightly.

Incorporate the Cheese: Gradually whisk in the freshly grated Parmesan cheese, stirring until the sauce becomes smooth and creamy. Taste and adjust seasoning with additional salt and black pepper if needed.

Combine Everything: Return the cooked chicken to the skillet with the creamy Alfredo sauce. Gently stir the chicken to ensure it is well-coated with the sauce.

Add Zucchini Noodles: Finally, add the spiralized zucchini noodles to the skillet, tossing everything together for 2-3 minutes. Cook just until the zoodles are warmed through and tender, being careful not to overcook them to avoid a mushy texture.

Serve: Plate the Chicken Alfredo Zoodles onto individual dishes and garnish with freshly chopped parsley for a vibrant touch. Enjoy your delicious and healthy meal!
