Cherry Pie Crumble Bars

2 cups fresh or frozen cherries, pitted and halved

1 cup granulated sugar

2 tablespoons cornstarch

1 tablespoon fresh lemon juice

1 teaspoon pure vanilla extract

1/4 teaspoon almond extract (optional)

1 1/2 cups all-purpose flour

1/2 cup rolled oats

1/2 cup packed brown sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/2 teaspoon ground cinnamon (optional)

Instructions
 

Prepare the Cherry Filling:

    - In a medium saucepan set over medium heat, combine the pitted and halved cherries, granulated sugar, cornstarch, lemon juice, vanilla extract, and almond extract (if using). Stir the mixture until all ingredients are well incorporated.

      - Continue to cook, stirring occasionally, for about 5-7 minutes or until the filling thickens and begins to bubble. Once thickened, remove from heat and set aside to cool.

        Prepare the Crust and Topping:

          a. Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish with cooking spray or line it with parchment paper for easy removal.

            b. In a large mixing bowl, combine the all-purpose flour, rolled oats, packed brown sugar, baking powder, salt, and ground cinnamon (if using). Stir until the dry ingredients are evenly mixed.

              c. Pour in the melted butter and mix with a fork or your hands until the mixture resembles coarse crumbs and holds together when pressed.

                Assemble the Bars:

                  a. Take half of the crust mixture and evenly press it into the bottom of the prepared baking dish to create a solid base layer.

                    b. Pour the cooled cherry filling over the crust, using a spatula to spread it out evenly.

                      c. Sprinkle the remaining crust mixture over the cherry filling, ensuring it covers the cherries completely.

                        Bake:

                          - Place the baking dish in the preheated oven and bake for 30-35 minutes or until the topping turns golden brown and the filling is bubbly.

                            Cool and Serve:

                              - Allow the bars to cool in the baking dish for at least 10 minutes. Carefully transfer them to a wire rack to cool completely. Once fully cooled, cut into squares.
