This step helps to draw out excess moisture from the zucchini. After resting, take a clean kitchen towel or cheesecloth and squeeze the zucchini firmly to extract as much liquid as possible; this ensures your fritters won’t be soggy.

    Mix Ingredients: In another mixing bowl, combine the all-purpose flour, grated Parmesan cheese, shredded mozzarella cheese, eggs, chopped green onions, parsley, garlic powder, and black pepper.
