Ingredients

20 jumbo pasta shells

1 pound ground turkey

3 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese (plus additional for topping)

½ cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil for garnish (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Carefully add the jumbo pasta shells and cook following the package instructions until they reach an al dente texture. Drain them carefully and set aside to cool.

Prepare the Filling: Heat a large skillet over medium heat. Add the ground turkey and cook until it is browned, using a spatula to break it apart, approximately 5-7 minutes. Incorporate the minced garlic and cook for an additional minute, allowing the flavors to meld. Add the chopped spinach to the skillet and sauté until it has wilted, which should take about 2-3 minutes.

Mix the Filling: In a spacious bowl, combine the cooked turkey and spinach mixture with ricotta cheese, 1 cup of mozzarella, grated Parmesan cheese, the egg, Italian seasoning, and salt and pepper. Stir everything together until the mixture is evenly integrated.

Stuff the Shells: Preheat your oven to 375°F (190°C). Take a generous spoonful of the turkey and spinach filling and carefully stuff each jumbo shell. Arrange the filled shells in a 9x13 inch baking dish, ensuring that they are placed open-side up.

Add the Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring that they are fully covered. Sprinkle any remaining mozzarella cheese on top for a deliciously cheesy finish.

Bake: Cover the baking dish tightly with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is bubbly and has developed a beautiful golden color.

Garnish and Serve: Once baked, carefully remove the dish from the oven and allow it to cool for a few minutes. If desired, garnish with fresh basil for a pop of color and flavor. Serve hot and relish your scrumptious cheesy turkey and spinach stuffed shells!
