2 cups cooked rice (white or brown)

1 pound ground turkey

2 cups fresh broccoli florets (or frozen, fully thawed)

1 cup shredded sharp cheddar cheese

1 cup cream of mushroom soup (store-bought or homemade)

1 cup milk

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried thyme

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup breadcrumbs (optional, for a crunchy topping)

2 tablespoons olive oil or butter

Preheat the Oven: Set your oven to 350°F (175°C) to preheat while you prepare the casserole.

    Cook the Turkey: In a large skillet, heat the olive oil or butter over medium heat. Add the finely chopped onion and minced garlic to the skillet. Sauté for about 4-5 minutes, until the onions are soft and translucent. Increase the heat to medium-high, then add the ground turkey. Season with salt, pepper, dried thyme, and smoked paprika. Cook the turkey for about 7-10 minutes, stirring occasionally, until it is browned and fully cooked through. Drain any excess fat from the skillet.

      Prepare the Broccoli: If you're using fresh broccoli, steam or blanch the florets in boiling water for approximately 3-4 minutes, until they are bright green and tender-crisp. If using frozen broccoli, ensure it is completely thawed and well-drained.

        Combine Ingredients: In a large mixing bowl, combine the turkey mixture, cooked rice, prepared broccoli, cream of mushroom soup, and milk. Stir gently until all ingredients are evenly mixed. Fold in half of the shredded cheddar cheese, ensuring it is well incorporated.

          Transfer to Baking Dish: Pour the combined mixture into a greased 9x13 inch baking dish, spreading it evenly with a spatula to ensure even cooking.

            Add Toppings: Sprinkle the remainder of the shredded cheddar cheese on top of the casserole. If you prefer a crunchy texture, you can also add a layer of breadcrumbs over the cheese.
