Ingredients

  • 6.0 large eggs
  • 1.0 cup fresh spinach, chopped
  • 4.0 slices bacon, cooked and crumbled
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup milk
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.0 to taste salt
  • 0.0 to taste pepper
  • 0.0 as needed cooking spray or olive oil for greasing

Instructions

  • Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This will ensure it's hot and ready for your delicious egg cups.
  • Prepare the Muffin Tin: Lightly grease a 12-cup muffin tin with cooking spray or olive oil. This will help prevent the egg cups from sticking.
  • Cook the Bacon: If you haven't already cooked the bacon, fry it until crispy in a skillet over medium heat. Once cooked, remove from the heat and let it drain on paper towels before crumbling into pieces.
  • Mix the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until fully combined.
  • Add Ingredients: Stir in the chopped spinach, crumbled bacon, and shredded cheddar cheese into the egg mixture, ensuring everything is evenly distributed.
  • Fill the Muffin Tin: Pour the egg mixture evenly into each of the prepared muffin cups, filling them about 0.75 full. This allows room for the eggs to rise as they cook.
  • Bake: Place the muffin tin in the preheated oven and bake for about 16.5 minutes, or until the egg cups are puffed and set in the center.
  • Cool and Serve: Once baked, remove the muffin tin from the oven and let the egg cups cool in the tin for 5 minutes. Carefully run a knife around the edges and pop them out. Serve warm.
  • Optional Garnish: For an extra touch, you can sprinkle more cheese or fresh herbs like parsley or chives on top before serving. Enjoy!
