Ingredients

1 cup fresh or frozen corn kernels (ensure they are thawed if using frozen)

1 can (15 oz) black beans, thoroughly drained and rinsed

1 cup diced Hatch green chiles (can be canned or fresh; if fresh, roast and peel them beforehand)

1 cup cream cheese, softened to room temperature

1 cup shredded sharp cheddar cheese

1 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and black pepper, to taste

12 mini phyllo cups (store-bought for convenience)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Preheat the Oven: Set your oven to 350°F (175°C) to preheat while you prepare the dip cups, ensuring they will bake evenly.

Combine the Filling: In a large mixing bowl, add the corn kernels, black beans, diced Hatch green chiles, softened cream cheese, shredded cheddar cheese, sour cream, garlic powder, onion powder, cumin, smoked paprika, and a generous pinch of salt and pepper. Mix all the ingredients thoroughly with a spatula until the mixture is smooth and well-blended.

Fill the Phyllo Cups: Arrange the mini phyllo cups on a baking sheet. Using a spoon or a small cookie scoop, fill each cup generously with the cheesy corn dip filling, pressing it down gently to ensure it stays compact.

Bake: Transfer the baking sheet to the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and melted, and the edges of the phyllo cups are beautifully golden brown.

Garnish: Once baked, remove the cups from the oven and allow them to cool for a few minutes. Just before serving, sprinkle each cup with freshly chopped cilantro for an added touch of flavor and freshness.

Serve: Present your Cheesy Hatch Chili Corn Dip Cups warm, accompanied by lime wedges on the side. Guests can squeeze lime juice over the top for an extra zesty kick, making these the perfect appetizer for gatherings or a delicious treat for a cozy night in!
