1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies (undrained)

1 can (8 oz) tomato sauce

1 cup corn kernels (frozen or canned, drained)

2 cups elbow macaroni (uncooked)

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups shredded cheddar cheese (divided)

Fresh cilantro, chopped (for garnish, optional)

Instructions
 

Brown the Meat: In a large skillet set over medium heat, add the ground beef (or turkey) along with the diced onion. Cook for about 5-7 minutes, stirring occasionally, until the meat is browned and the onion is tender. Add the minced garlic and cook for an additional minute until fragrant. If there is excess fat, drain it away.

    Combine Ingredients in Crockpot: Carefully transfer the browned meat mixture into the crockpot. Add the beef broth, kidney beans, black beans, diced tomatoes (including their juices), tomato sauce, corn, and uncooked elbow macaroni. Sprinkle in the chili powder, cumin, smoked paprika, and season generously with salt and pepper. Stir well to combine all the ingredients.

      Cook: Cover the crockpot with its lid and set it to cook on low for 6-7 hours or on high for 3-4 hours. The dish is ready when the macaroni is tender and the flavors have melded beautifully.

        Add the Cheese: About 30 minutes before the cooking time is complete, stir in 1 cup of the shredded cheddar cheese. Cover the crockpot and continue to cook until the cheese is fully melted and incorporated into the chili mac.
