Ingredients

1 large head of cauliflower, cut into bite-sized florets

2 tablespoons extra-virgin olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

Sea salt and black pepper, to taste

1 cup shredded sharp cheddar cheese

1 cup shredded pepper jack cheese

1 can (15 oz) black beans, thoroughly rinsed and drained

1 cup cherry tomatoes, halved

1 jalapeño, thinly sliced (optional, for heat)

1 ripe avocado, diced

1/4 cup sour cream or Greek yogurt (for drizzling)

Fresh cilantro, finely chopped (for garnish)

Lime wedges (for serving)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure an even bake.

Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with the olive oil. Sprinkle in the smoked paprika, garlic powder, ground cumin, sea salt, and black pepper. Toss until all florets are thoroughly coated in the spice mixture.

Bake the Cauliflower: Transfer the seasoned cauliflower to a baking sheet lined with parchment paper. Spread the florets out in an even layer. Place in the preheated oven and bake for 20-25 minutes, or until the cauliflower is tender and golden. Remember to toss the florets halfway through cooking for even browning.

Add Cheeses and Beans: Once the cauliflower is roasted, remove it from the oven. Generously sprinkle the shredded sharp cheddar and pepper jack cheeses over the top. Add the rinsed black beans and halved cherry tomatoes evenly across the tray. If you're adding jalapeños, distribute them for an extra kick.

Return to the Oven: Place the tray back in the oven and bake for another 10 minutes, until the cheese has melted and is bubbling deliciously.

Top and Serve: After removing from the oven, allow the tray bake to cool for a minute. Drizzle sour cream or Greek yogurt over the cheesy goodness, and then add the diced avocado and freshly chopped cilantro to enhance the flavors.

Garnish & Enjoy: Serve your cheesy cauliflower nacho tray bake warm. Include lime wedges on the side for guests to squeeze over their portions, adding a bright, zesty finish. Enjoy this scrumptious and wholesome twist on classic nachos!
