Cheesy Beef and Spinach Stuffed Shells

20 jumbo pasta shells

1 lb ground beef

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

1 large egg

3 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil

Salt and pepper, to taste

3 cups marinara sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the jumbo pasta shells and cook them according to the package instructions until they are al dente, usually around 8-10 minutes. Once cooked, drain the shells and set aside to cool while you prepare the filling.

    Prepare the Filling: Heat a large skillet over medium heat. Add the ground beef and cook, stirring frequently, until it’s browned and no longer pink. Drain any excess fat from the pan. Next, add the minced garlic and sauté for an additional minute until aromatic. Stir in the chopped spinach and cook for 2-3 minutes, just until the spinach is wilted. Remove from heat and let cool slightly.

      Mix the Cheese Mixture: In a large mixing bowl, combine the ricotta cheese, 1 cup of the shredded mozzarella cheese, grated Parmesan cheese, egg, dried oregano, dried basil, and a generous pinch of salt and pepper. Add the cooked beef and spinach mixture to the bowl and mix thoroughly until all ingredients are evenly combined.

        Stuff the Shells: Preheat your oven to 375°F (190°C) in preparation for baking. Gently take each jumbo shell and using a spoon or a small spatula, fill it with the cheesy beef and spinach filling, making sure to pack it in without tearing the shell.

          Assemble the Dish: Spread 1 cup of marinara sauce evenly across the bottom of a 9x13 inch baking dish. Carefully place the stuffed shells seam-side up in the dish. Once all shells are in place, pour the remaining marinara sauce over the tops, ensuring they are well-coated but not drowning in sauce.

            Top with Cheese: Sprinkle the remaining ½ cup of mozzarella cheese evenly over the filled shells, allowing for some cheese to ooze into the sauce while baking.

              Bake: Cover the baking dish tightly with aluminum foil. To prevent sticking, lightly spray the foil with cooking spray before covering the dish. Place the dish in the preheated oven and bake for 25 minutes. After this time, remove the foil and continue to bake for an additional 10-15 minutes, until the cheese is bubbly and golden brown.

                Garnish and Serve: After baking, take the dish out of the oven and let it cool for about 5 minutes. Before serving, sprinkle with freshly chopped parsley for a burst of color and flavor.
