4 medium bell peppers (any color)

1 cup cooked quinoa

1 pound ground beef (or ground turkey)

1 small onion, diced

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or a cheese blend)

¼ cup fresh cilantro or parsley, chopped (for garnish)

2 tablespoons olive oil

1 teaspoon chili powder (optional)

Instructions
 

Preheat the Oven:

    - Begin by preheating your oven to 375°F (190°C) to prepare for baking the stuffed peppers.

      Prepare the Peppers:

        - Slice the tops off the bell peppers and gently remove the seeds and membranes.
