1 lb ground beef

1 cup quinoa, rinsed and drained

2 cups beef broth

1 cup diced tomatoes (either canned or fresh)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup frozen mixed vegetables (such as peas, carrots, and corn)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C) to prepare for baking.

    Sauté Aromatics: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until the onion becomes translucent and fragrant.

      Brown the Beef: Incorporate the ground beef into the skillet, breaking it up with a spatula. Cook for 5-7 minutes or until the beef is fully browned. Season with smoked paprika, Italian seasoning, salt, and pepper, mixing well to combine.

        Add Veggies: Stir in the diced tomatoes and frozen mixed vegetables. Allow the mixture to simmer for 3-4 minutes until heated through and flavors meld.

          Cook the Quinoa: In a separate pot, bring the beef broth to a boil. Add the rinsed quinoa, then reduce the heat to low, cover, and let it simmer for approximately 15 minutes until the quinoa is fluffy and has absorbed all of the broth.

            Combine Mixtures: Once the quinoa is ready, gently fold it into the beef and vegetable mixture. Stir in half of the shredded cheddar and mozzarella cheeses, ensuring the mixture is evenly combined.

              Assemble the Casserole: Transfer the beef and quinoa mixture into a greased 9x13 inch casserole dish. Evenly sprinkle the remaining cheese on top.

                Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and continue to bake for an additional 10-15 minutes, or until the cheese is bubbly and a lovely golden brown.

                  Serve: Once baked, remove the casserole from the oven and allow it to cool for a few minutes. Garnish with chopped fresh parsley before serving.
