1 lb ground beef

1 cup quinoa, rinsed and drained

2 cups beef broth

1 can (15 oz) black beans, rinsed and drained

1 can (14.5 oz) diced tomatoes, drained

1 cup corn (frozen or canned)

1 small onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon ground cumin

½ teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded cheddar cheese (plus extra for topping)

½ cup sour cream

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure it's hot when the casserole is ready for baking.

    Cook the Beef: In a large skillet, heat over medium heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon. Drain any excess fat from the skillet.

      Sauté Vegetables: Add the diced onion and minced garlic to the cooked beef in the skillet. Sauté for about 3-4 minutes or until the onion becomes translucent and fragrant.

        Combine Ingredients: To the skillet, add the rinsed quinoa, beef broth, black beans, drained diced tomatoes, corn, chili powder, cumin, paprika, salt, and black pepper. Stir everything together well to ensure even distribution.

          Simmer: Increase the heat slightly to bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes. This allows the quinoa to cook and absorb most of the liquid, stirring occasionally.

            Mix in Cheese and Sour Cream: After simmering, remove the skillet from heat. Quickly stir in the shredded cheddar cheese and sour cream until fully melted and creamy throughout the mixture.

              Transfer to Baking Dish: Lightly grease a 9x13 inch baking dish (or similar size) with cooking spray or oil. Carefully pour the beef and quinoa mixture into the dish, spreading it evenly across the bottom. Top with extra shredded cheese for a cheesy finish.

                Bake: Place the baking dish in the preheated oven. Bake for 20-25 minutes, or until the cheese on top is bubbly and golden brown, creating a delicious crust.
