Ingredients

1 lb ground beef

2 cups fresh broccoli florets

1 cup jasmine rice (or rice of choice)

2 cups beef broth (or water)

1 cup shredded cheddar cheese

1/2 cup diced onion

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

2 tablespoons olive oil

Green onions, sliced (for garnish)

Sesame seeds (optional, for garnish)

Instructions

Cook the Rice: In a medium saucepan, combine the jasmine rice along with the beef broth. Bring the mixture to a rolling boil. Once boiling, reduce the heat to low, cover the pot with a lid, and allow it to simmer for about 15 minutes or until the rice is tender and the liquid has been absorbed. Once cooked, fluff the rice gently with a fork and set it aside.

Sauté the Vegetables: While the rice is cooking, place a large skillet over medium heat and add the olive oil. Once the oil is hot, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.

Brown the Ground Beef: Next, add the ground beef to the skillet. Use a spatula to break it up into smaller pieces as it cooks. Allow it to brown for about 5-7 minutes. If there is any excess fat once browned, carefully drain it from the skillet.

Incorporate the Broccoli: To the skillet, add the fresh broccoli florets, soy sauce, Worcestershire sauce, smoked paprika, salt, and black pepper. Stir everything together and cook for another 5-6 minutes, or until the broccoli is bright green and tender yet still crisp.

Combine and Melt Cheese: Lower the heat to a gentle simmer in the skillet. Stir in the cooked rice, mixing all the ingredients together thoroughly. Gradually sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet with a lid and allow the cheese to melt for approximately 3-4 minutes.

Serve: Once the cheese is perfectly melted and bubbly, remove the skillet from the heat. Spoon the Cheesy Beef and Broccoli Rice Bowls into individual serving bowls and garnish with sliced green onions and a sprinkle of sesame seeds, if desired.
