2 cups beef broth or water

1 pound ground beef (or ground turkey)

2 cups broccoli florets, either fresh or frozen

1 small onion, finely diced

3 cloves garlic, minced

1 cup shredded cheddar cheese, plus extra for topping (optional)

1 cup milk (or your choice of plant-based milk)

2 large eggs

1 teaspoon Italian seasoning

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional for heat)

Preheat the Oven: Start by preheating your oven to 350°F (175°C) to ensure it's hot and ready for baking.

    Cook the Quinoa: In a medium-sized saucepan, combine your rinsed quinoa with the beef broth (or water). Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pan, and let it simmer for approximately 15 minutes, or until the liquid is fully absorbed and the quinoa becomes fluffy. Once done, set it aside.

      Sauté the Beef and Onion: In a large skillet, heat a small drizzle of cooking oil over medium heat. Add the finely diced onion to the skillet and sauté it for about 3-4 minutes until it becomes translucent. Following this, add the minced garlic and ground beef.
