Ingredients

2 cups cooked jasmine rice (preferably day-old for optimal texture)

4 oz assorted charcuterie meats (such as salami, prosciutto, and chorizo), diced

1/2 cup sharp cheddar cheese, shredded

1/2 cup cooked and crumbled bacon

1/2 cup green peas (fresh or frozen)

3 green onions, chopped

2 large eggs, beaten

3 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley or cilantro, for garnish (optional)

Instructions

Prepare the Ingredients: If not done in advance, cook your jasmine rice a day before and refrigerate it to firm up the grains. Dice your charcuterie meats into small pieces and chop the green onions, setting them aside.

Heat the Pan: In a large skillet or wok, add the olive oil and heat it over medium-high heat until it shimmers.

Cook the Eggs: Pour the beaten eggs into the hot pan, allowing them to scramble. Stir frequently until they’re fully cooked through, then remove them from the skillet and place them on a plate for later.

Sauté the Meats: In the same skillet, add the diced charcuterie. Cook for about 3-4 minutes, stirring occasionally until the edges are slightly crispy. Then, add the crumbled bacon and mix well to combine.

Add the Rice: Increase the heat to high, adding the cold jasmine rice into the pan. Use a spatula to break apart any clumps, stirring continuously for about 5-7 minutes until the rice is heated through and develops a slight crispness.

Season the Rice: Pour in the soy sauce, drizzle with sesame oil, and sprinkle in the garlic powder. Toss in the green peas and previously cooked scrambled eggs. Mix thoroughly and continue cooking for an additional 2-3 minutes. Taste and adjust seasoning with salt and pepper as needed.

Final Touch: Just before removing the pan from the heat, fold in the chopped green onions, allowing their flavor to meld with the dish.

Serve: Transfer the fried rice onto plates, topping each serving with a generous sprinkle of shredded cheddar cheese. For a fresh finish, consider garnishing with chopped parsley or cilantro.
