Ingredients

2 medium zucchinis, grated

2 large carrots, grated

1 cup all-purpose flour (or substitute with gluten-free flour)

1 large egg, lightly beaten

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan alternative)

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika (optional)

2 tablespoons fresh parsley, finely chopped (or 1 tablespoon dried parsley)

1 tablespoon olive oil, for frying

4 large whole wheat or spinach wraps

Hummus or tzatziki, for spreading

Fresh lettuce or spinach leaves, for filling

Halved cherry tomatoes, for garnish (optional)

Instructions

Prepare the Vegetables:

    - Begin by grating the zucchinis and carrots using a box grater or food processor. Once grated, transfer them to a clean kitchen towel, twist the towel, and squeeze out as much moisture as possible. This step is crucial to prevent the fritters from becoming soggy.

      Mix the Batter:

        - In a spacious mixing bowl, combine the grated zucchini, grated carrots, flour, beaten egg, grated Parmesan cheese (or nutritional yeast), salt, pepper, garlic powder, onion powder, smoked paprika (if using), and chopped parsley. Stir everything together thoroughly until the mixture forms a cohesive batter and the vegetables are evenly coated.

          Heat the Pan:

            - Place a large skillet over medium heat and add the olive oil. To check if the oil is hot enough for frying, drop a small spoonful of the batter into the skillet; it should sizzle right away.

              Fry the Fritters:

                - Once the oil is heated, carefully add spoonfuls of the batter (about 2 tablespoons each) to the skillet, gently flattening them with the back of a spoon. Fry the fritters for approximately 3-4 minutes on each side, or until they are golden brown and crispy. Continue this process with the remaining batter, adding more oil if necessary.

                  Assemble the Wraps:

                    - After frying, transfer the fritters to a paper towel-lined plate to absorb any excess oil. Take the wraps and spread a generous layer of hummus or tzatziki on each one. Layer the wraps with fresh lettuce or spinach leaves, and delicately place 2-3 fritters on top.

                      Garnish and Serve:

                        - For an optional touch of freshness, sprinkle halved cherry tomatoes on the wraps. Fold the wraps tightly, and if desired, cut them in half for easier handling. Serve immediately, enjoying them warm or at room temperature for a delightful meal.
