4 oz goat cheese, crumbled

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 egg, beaten (for egg wash)

Press the pastry into the pan, ensuring it covers the bottom and sides evenly. Trim any excess pastry from the edges. Using a fork, prick the bottom of the pastry to prevent puffing during baking. Place the tart shell in the refrigerator to chill while you prepare the filling.

    Caramelize the Onions: In a large skillet, combine the olive oil and unsalted butter over medium heat. Once the butter has melted, add the thinly sliced onions. Sprinkle with sugar, salt, and pepper. Cook the onions slowly, stirring occasionally, for about 30-40 minutes until they become deeply caramelized and golden brown. If the onions begin to stick to the pan, add a splash of water to help deglaze.
