Ingredients

4 boneless, skinless chicken breasts

Salt and black pepper, to taste

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried Italian herbs (a blend of oregano, basil, and thyme)

8 oz fresh mozzarella cheese, sliced

2 large ripe tomatoes, sliced

1 cup fresh basil leaves

1/2 cup balsamic vinegar

2 tablespoons honey

Optional: Cracked black pepper and fresh basil for garnish

Instructions

Prepare the Chicken: Begin by preheating your oven to 400°F (200°C). Pat the chicken breasts dry with paper towels and season generously with salt, black pepper, and dried Italian herbs on both sides to enhance the flavor.

Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat until shimmering. Carefully place the seasoned chicken breasts in the pan and sear them for about 4-5 minutes on each side, or until they develop a beautiful golden-brown crust.

Add Garlic: Lower the heat to medium-low and stir in the minced garlic. Sauté gently for about 30 seconds, just until the garlic is fragrant, being careful not to let it burn.

Layer the Toppings: Evenly arrange the fresh tomato slices on top of the chicken breasts, followed by the mozzarella slices. Transfer the skillet into the preheated oven and bake for 15-20 minutes, until the chicken is fully cooked (the internal temperature should reach 165°F or 75°C) and the cheese is melted and bubbly.

Make the Balsamic Glaze: While your chicken bakes, prepare the balsamic glaze. In a small saucepan over medium heat, whisk together the balsamic vinegar and honey. Bring the mixture to a gentle simmer, then reduce the heat to low. Stir occasionally for about 10-15 minutes, or until the glaze thickens and can coat the back of a spoon. Once ready, remove from heat and let it cool slightly.

Serve: Once the chicken is cooked, take the skillet out of the oven. Generously drizzle the balsamic glaze over the warm chicken and finish with a sprinkle of fresh basil leaves and cracked black pepper, if desired.

Enjoy: Serve this delightful Caprese chicken hot, paired beautifully with a fresh side salad or your choice of roasted vegetables for a complete meal.
