1 lb gnocchi (store-bought or homemade)

2 cups butternut squash, peeled and cubed

1 lb Italian sausage (sweet or spicy, to your taste), casings removed

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried sage

1/2 teaspoon red pepper flakes (optional, for added heat)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, for garnish (optional)

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it's ready for your delicious bake.

    Roast the Butternut Squash: On a baking sheet, toss the cubed butternut squash with 1 tablespoon of olive oil, a pinch of salt, and freshly cracked pepper. Spread the pieces out in a single layer. Roast in the oven for 25-30 minutes, or until the squash is tender and caramelized, flipping them halfway through to ensure even cooking.

      Cook the Sausage: In a large skillet over medium heat, add the remaining tablespoon of olive oil. Once hot, add the sausage (with casings removed), breaking it apart with a wooden spoon. Cook for about 5-7 minutes, or until the sausage is browned and fully cooked. Incorporate the minced garlic, dried thyme, dried sage, and red pepper flakes (if using). Sauté for an additional minute until fragrant and the garlic is softened.
