Broccoli Cheddar Quinoa Casserole

2 cups vegetable broth or water

2 cups fresh or frozen broccoli florets

1 cup sharp cheddar cheese, shredded (plus extra for topping)

1 cup milk (can use dairy or non-dairy alternatives)

1/2 cup Greek yogurt or sour cream

1/2 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon Dijon mustard

1 teaspoon paprika

Salt and pepper to taste

Olive oil for sautéing

Optional: 1/4 cup breadcrumbs for added crunch

Optional: Fresh chopped chives or parsley for garnish

Preheat the Oven: Start by setting your oven to 350°F (175°C) so it's ready for baking.

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa with vegetable broth (or water). Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes. The quinoa should be fluffy and all the liquid should be absorbed. Remove from heat and set aside.

      Sauté the Vegetables: Heat a tablespoon of olive oil in a large skillet over medium heat. When hot, add the finely chopped onion and minced garlic. Sauté for 3-4 minutes until the onion turns translucent. Next, add the broccoli florets (if using frozen, there’s no need to defrost them). Cook for an additional 5 minutes, allowing the broccoli to become tender but still retain its vibrant green color.

        Combine Ingredients: In a spacious mixing bowl, combine the cooked quinoa with the sautéed vegetable mixture. Stir in the milk, Greek yogurt (or sour cream), Dijon mustard, paprika, salt, and pepper. Mix everything until well blended. Finally, gently fold in the shredded cheddar cheese, reserving a small amount for the topping.
