1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon salt

½ cup unsalted butter, melted

1 large egg

For the Blueberry Filling:

2 cups fresh or frozen blueberries

¼ cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

½ teaspoon ground cinnamon (optional)

For the Crumb Topping:

1 cup all-purpose flour

½ cup rolled oats

¾ cup packed brown sugar

½ teaspoon ground cinnamon

½ cup unsalted butter, softened

Instructions
 

Prepare the Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9x9-inch baking pan or line it with parchment paper to facilitate easy removal later.

    Make the Crust: In a large mixing bowl, whisk together the 1 ½ cups of flour, ½ cup of sugar, and ½ teaspoon of salt until evenly combined. Add the melted butter and the egg to the dry ingredients, mixing until the dough comes together and all ingredients are well incorporated.

      Press the Crust: Evenly spread the dough across the bottom of the prepared baking pan, pressing it down firmly. Use a fork to poke a few holes along the surface of the crust—this helps prevent bubbling while baking. Bake in the preheated oven for about 15 minutes, or until the crust becomes lightly golden.

        Prepare the Blueberry Filling: While the crust is baking, combine the blueberries, ¼ cup of sugar, 2 tablespoons of cornstarch, lemon juice, vanilla extract, and optional cinnamon in a medium saucepan. Heat over medium heat, stirring gently until the mixture begins to bubble and thicken, approximately 5-7 minutes. Remove from heat and let it cool slightly.

          Make the Crumb Topping: In a separate bowl, mix together 1 cup of flour, rolled oats, ¾ cup of brown sugar, and ½ teaspoon of cinnamon. Cut the softened butter into the mixture using a fork or a pastry cutter, until it resembles coarse crumbs.

            Assemble the Bars: Once the crust is finished baking and has cooled a bit, pour the blueberry filling evenly over the crust. Generously sprinkle the crumb topping over the blueberry layer, ensuring even coverage.

              Bake: Place the assembled pan back into the oven and bake for an additional 25-30 minutes, or until the topping is a rich golden brown and the filling is bubbling.

                Cool and Serve: Allow the bars to cool in the pan on a wire rack for at least 30 minutes. If lined with parchment paper, lift the bars out carefully and cut them into squares or rectangles for serving.
