2 cups fresh or frozen blueberries

2 tablespoons chia seeds

2 tablespoons honey or maple syrup (adjust based on your sweetness preference)

1 tablespoon fresh lemon juice

A pinch of salt

For the Oat Crust:

1 ½ cups rolled oats

½ cup almond flour (or any nut flour of your choice)

¼ cup melted coconut oil (or unsalted butter)

¼ cup honey or maple syrup

1 teaspoon vanilla extract

½ teaspoon baking soda

A pinch of salt

For Topping:

¼ cup sliced almonds (or any nut of choice)

2 tablespoons unsweetened coconut flakes (optional)

Instructions
 

Prepare the Blueberry Chia Jam:

    - In a medium saucepan set over medium heat, combine the blueberries, honey (or maple syrup), lemon juice, and a pinch of salt.

      - Cook the mixture for 5-7 minutes, stirring occasionally, until the blueberries break down and release their juices.

        - Remove the saucepan from heat and stir in the chia seeds. Allow the jam to cool for about 10-15 minutes; it will continue to thicken as it sits.

          Prepare the Oat Crust:

            - Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, ensuring there’s an overhang for easy removal later.

              - In a large mixing bowl, combine the rolled oats, almond flour, baking soda, and a pinch of salt.

                - In a separate bowl, mix together the melted coconut oil, honey (or maple syrup), and vanilla extract until well combined, then pour it into the dry ingredients. Stir until the mixture is crumbly and evenly combined.

                  Assemble the Bars:

                    - Take half of the oat mixture and press it firmly into the bottom of the prepared baking pan to create an even layer.
