Black Bean Mango Tacos

Taco Shells:

8 small corn or flour tortillas

Black Bean Filling:

1 can (15 oz) black beans, drained and rinsed

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

Mango Salsa:

1 ripe mango, peeled, pitted, and diced

1 small red onion, finely chopped

1 jalapeño, deseeded and minced (adjust based on desired spice level)

1 handful of fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Avocado Cream:

1 ripe avocado

¼ cup Greek yogurt (or a dairy-free alternative such as coconut yogurt)

Juice of ½ lime

Salt and pepper to taste

Instructions
 

Prepare the Black Bean Filling:

    - In a medium skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the drained and rinsed black beans along with ground cumin, smoked paprika, garlic powder, and onion powder.

      - Cook for approximately 5-7 minutes, stirring occasionally, until the beans are heated through and start to break down slightly. Adjust seasoning with salt and pepper to taste. Once done, set the mixture aside to cool slightly.

        Make the Mango Salsa:

          - In a mixing bowl, combine the diced mango, finely chopped red onion, minced jalapeño, and chopped cilantro.
